Catherine de' Medici

 

Invented in 1533, macarons were made in Italy and introduced by her chef at the time of her marriage to the Duc d'Orleans who became king of France in 1547 as Henry II. However, the macarons we know today originated in the beginning of the 20th century when Pierre Desfontaines had the idea to fill two cookie shells with a "chocolate ganache" and stick them together.

 

The first macarons were simple cookies - without fillings. Only at the start of the 20th century had macarons included fillings.
